White Fish Smoking on the Rack

 

I like to fish and when I saw the fish drying I was interested.  I’ve never seen this before. I’ve only seen moose, white tail deer and elk get smoked. With the fish they cut off the heads but not the tails. They hung the fish over the rack skin down. They built a fire to smoke the fish. Now that I’ve seen it, I would like to try this myself.
